Dressing:
1 cup mayonnaise
¼ cup sweet pickle juice
¼ cup white vinegar
2 Tbsp sugar
1 tsp kosher salt
¼ tsp of black pepper
Slaw:
1 head green cabbage (~2lb), finely shredded
½ onion, minced
1 carrot, grated
½ bell pepper, diced
1 Tbsp dill pickle, minced (or relish, if you prefer)
Whisk together all of the dressing ingredients, so they can dissolve and meld into each other before the big toss.
Pour the dressing over the veggies and toss well, until the dressing completely coats the slaw. Cover and chill 15 minutes before serving.
